Easy recipe: tomato and old-fashioned mustard pie

  • Herbes de Provence or fresh thyme

  • Olive oil

  • Salt and pepper

  1. Preheat the oven to 200°C (about 400°F or gas mark 6-7).

  2. Roll out the pastry into a tart pan and prick the bottom with a fork.

  3. Spread the whole grain mustard over the base. Don’t use too much to avoid bitterness, but enough to give the tart a nice kick.

  4. Slice the tomatoes thinly and arrange them over the mustard. It’s a good idea to let them drain slightly with a sprinkle of salt for 15 minutes beforehand to prevent the tart from becoming too watery.

  5. Add the grated cheese, herbs, a drizzle of olive oil, salt, and pepper.

  6. Bake for 30 to 35 minutes, until the crust is golden and the top lightly gratinéed.
